Oilfield Cafe: Hot Oil Man Approved Salsa

salsaI love salsa. I love Love LOVE it. I think I could live off chips and salsa. Since we live in Alaska and there are no good, authentic Mexican restaurants up here, making a tasty salsa is up to me. I have made many salsas in the past. I usually just throw things is – which sometimes produces a tasty salsa, and other times……not so much. This was the first salsa “recipe” I’ve ever used, and I absolutely love it. It came from a friend and fellow Oilfield wife who made a batch and shared it with us  – and we’ve been hooked ever since. We’ve been making it about once a week. It’s definitely better than my “throw in whatever feels right” method. This salsa is addictive and we can’t stop eating it until it’s gone. My Hot Oil Man eats it with every meal.  Even my kids like it which is crazy because not only are they super duper picky eaters, they also hate onions and tomatoes, so I’m shocked they like it – but they do! I have adapted it slightly.  I make a milder version for the kids without the hot peppers, and then I make a another batch for the hubs and I and really spice it up.

Here’s what you’ll need:

1 bunch green onions
1 bunch cilantro
4 jalapenos or other hot pepper (optional)
3 cans of tomatoes
1 clove of garlic
1 Tablespoon Worcestershire sauce
1 Tablespoon Sriracha sauce
1 teaspoon sugar
salt (as desired)

chipsAdd all ingredients in the blender and blend until smooth. That’s it.  Salt can be added if needed… I only had to salt it once and that’s when I used unsalted stewed tomatoes. Also, more Worcestershire, Sriracha sauce, or sugar can be added to tweak the favor to your personal taste. The beauty of salsa is it is very versatile and it never tastes the same way twice. Sometimes it’s more garlicky. The bunch of green onions could be bigger or smaller or sweeter or hotter than the last time, and it will taste different. And yet, by using the recipe it always has the same basic familiar flavor we love while never being boring. It’s a winner.
